Ginger ale glaze for ham

Ginger Ale-Glazed Ham

1 boneless ham (1.5 to 1.8 kg/3 to 4 lb)

250 ml (1 cup) white wine

37 ml (2 1/2 tbsp) Dijon mustard

30 ml (2 tbsp) molasses

Pinch cayenne pepper

500 ml (2 cups) ginger ale

30 ml (2 tbsp) honey

Preheat oven to 150 C (300 F). Place ham in a roasting pan.

In a medium saucepan, combine wine, mustard, molasses and cayenne pepper. Bring to a simmer and cook for 5 minutes. Stir in ginger ale. Pour glaze over ham. Bake for 1 1/2 hours.

Increase oven temperature to 160 C (325 F). Bake for another hour, basting ham every 15 minutes.

Brush ham with honey. Bake, basting every 15 minutes, until ham is well glazed, about another 30 minutes. Slice and serve.

Makes 8 to 10 servings.
