Salad of Green and White Asparagus with San Daniele Ham

12 white asparagus spears, trimmed
12 green asparagus spears, trimmed
4 tbsp classic vinaigrette
1 tbsp freshly chopped coriander
12 slices San Daniele ham
Freshly ground salt and pepper

1 Boil a large pan of water. Add the asparagus and cook for 1 minute. Drain and then plunge into a large bowl of iced water.

2 To assemble the salad, arrange the ham in scrunched-up rosettes with the asparagus spears arranged alternately green and white. Spoon over the dressing and season well.
