Pumpkin Sauce with Sweet Spices

This sauce is perfect with fillets of wild rabbit, wild boar or pan fried duck breast.

Serves 4

500gr game trimmings or carcass
3 tbsp oil
60 gr shallots, finely chopped
300gr pumkin cut into small cubes
50ml rasberry vinegar
200ml sweet white wine
500ml veg stock
1 bouquet garni
1 vanilla pod, split
3 star anise
40gr butter, diced and chilled


Brown trimmings in oil, when brown drain excess oil.
Add shallots and pumkin and gently sweat for 3 min.
Turn off heat and add rasberry vinegar, after 1min deglace with white wine and simmer for 5 min.
Add veg stock, bouquet garni and spices and cook gently for 45 min.

Skim when necessary.
Pass through wire mesh conical and then reduce.
Whisk in butter, season and serve
