Feta and pea shoot tart

2 garlic cloves

1 tbsp vegetable oil

50g pea shoots

3 large eggs

100ml thick double cream

100g Greek feta cheese

Ready-cooked pastry case,

approx 21cm

2 tbsp grated Parmesan

Heat the oven to 400F/200C/gas mark 6. Peel and chop the garlic. Sprinkle with salt and crush to a paste. Heat the oil in a frying pan, stir fry the garlic for a few seconds then add the pea shoots. Stir fry for a couple of minutes until wilted. Tip onto a chopping board and chop finely. Whisk the eggs in a mixing bowl.

Stir in the cream then crumble the feta over the top. Add the garlicky pea shoots. Season lightly with salt and generously with freshly grated black pepper and stir thoroughly. Remove the pastry case from its wrapping and place on a baking sheet (this just makes it easier to transport). Pour in the filling and scatter with Parmesan. Place in the oven, immediately reduce the temperature to 350F/180C/gas mark 4 and cook for 15-20 minutes until just set, firm and bouncy to a flat hand. Slide onto a plate and serve hot, warm or cold.
