Fresh goats cheese sauce with rosemary

Serve sauce with cold dishes such as poached fish, roast or poached chicken, or with large pink shrimps or prawns.

250ml milk (less if cheese has a very soft consistancy 150-200ml)
30gr fresh rosemary
300gr frsh goats cheese, softened with spatula
salt and freshly ground pepper

method

In a suacepan, bring milk to boil.
Add rosemary, cover pan and leave to infuse
Strain cooled milk and whisk into goats cheese

serve

how u'll season this sauce with sugar or honey with salt?
