Panzanella Tuscan bread and vegetables salad

500g of stale Italian bread, heavy crusts removed
6 medium ripe tomatoes, chopped
6 spring onions, chopped
2 small cucumber
1 small bunch of fresh parsley or basil
20 pitted black olives, chopped
Splash red wine vinegar
4 cloves garlic, chopped
3 whole red capsicum, roasted, peeled, and chopped.

Good splash of olive oil
Break the bread into pieces, and soak briefly in water until moistened. Carefully squeeze dry. Place the bread in a bowl and add the remaining ingredients. Mix well.
