Pimm's e'spuma (foam)

150g apple juice
130gr stock syrup
250gr tonic water
140g Pimm's
3 leaves gelatine

Soak gelatine in ice cold water.
Warm 100ml tonic water, add gelatine and stir until dissolved.
Mix in the rest of the ingredients.
add tosiphon / iSi gourmet whip and charge with 2 x n2o charges.
Chill in fridge for 6 hours before serving.
