Hot chocolate e'spuma

300g 60% cocoa chocolate finely chopped
250gr egg whites
200 gr water

Melt chocolate in bain marie. the chocolate temp must not exceed 40 c.
Add the egg whites and water, whisk gently.

Place in siphon and charge with 2 x nitrous oxide charges
Warm in hot water to approx 60 c and serve
