Caviar (small balls of flavour)

Gravy caviar

200gr lamb jus
200gr chicken stock
10gr merlot vinegar
2g kelcogel f gellan
3 litres drozen veg oil

mix all ingredients except oil in a pan and bring to boil.
Using a pipette, squeeze the mixture onto the frozen veg oil.
The frozen oil sets the gel instantly(the repulsion of oil and water ensure the droplets are perfect spheres)
Leave at reom temp until oil is viscous and can be sieved.
Put through a sieve, you will be left with caviar balls of gravy.

This principle will apply to most liquids.
