Ingredients:
1kg plum tomatoes, skinned and seeded
1 onion
1 cucumber, peeled, halved and seeded
6 red peppers, seeded
3 yellow peppers, seeded
75ml aged Sherry vinegar
75ml Spanish extra-virgin Olive Oil
1oz rock salt
1/2oz caster sugar
Juice and zest of 1 orange
2 slices of rustic bread, crusts removed

Method:
Roughly chop all vegetables. Mix all ingredients together and leave
in a fridge to marinade for 24 hours. Blend and serve ice cold.
