Healthy Pumpkin Soup

A pumpkin soup is one sure way to get the nutrients you need while keeping your body warm!

What you will need:

2 slices of bacon, chopped
1 onion, chopped
29 ounce can pumpkin
3 cups of low sodium chicken broth
1 cup of applesauce
2 teaspoons of ground ginger
1.2 cup of light sour cream
salt and pepper to taste
What you should do:

Saute bacon and onion. Drain any excess fats on the pan. Add the pumpkin, ginger, chicken broth and apple sauce. Mix well. Add the required amount of salt and pepper. Stir well. Bring the mixture into a boil and simmer. Add 1/2 cup of light sour cream. Stir well. Serve while hot.
