Light French Onion Soup

Nothing beats having a warm bow of this amazing soup on a winter night!

What you will need:

1 tbsp of unsalted butter
1 tbsp of olive oil
3 large Spanish Onions, sliced thinly
tsp Kosher salt
1 tsp sugar
1 tbsp flour
1/3 cup of dry sherry
6 cups of reduced-sodium chicken stock
tsp of freshly ground pepper
2 tsp of soy sauce
4-8 slices of French bread
4 ounces of Gruyere cheese, sliced

What you should do:

Preheat your oven to 400 degrees. Place oil and butter on a skillet over medium heat. Add salt and onions then cover it. Cook for 5 minutes then add sugar. Cook for 25 minutes and stir occasionally until the onions become golden brown. Add flour then reduce the heat to a medium low. Cook for 1-2 minutes then add dry sherry. Cook for 1-2 minutes. Transfer the mixture to a sauce pan. Add in pepper and chicken stock. Boil, simmer for 10 minutes, cover. Add the soy sauce.

Bake bread slices for 7 minutes per side or until golden brown.
Heat the broiler. Transfer soup into oven proof bowls using a ladle.Put 1-2 bread slices on top and add two cheese slices. Broil until cheese becomes bubbly.
