Char grilled veal chops with sage and roasted garlic

4 veal chops
2 heads garlic
2 extra small garlic cloves
5 tbsp olive oil
30 gr sage leaves
1 tsp paprika
250 ml veg oil
150 ml reduced chicken stock


Several hours ahead, put veal intomarinate: smash 2 two cloves garlic, half olive oil, 1 tbsp chopped sage. Turn the chops in this marinade.

Preheat barbeque and oven to 220 c

Cut heads of garlic in half laterally, into roasting dish, drizzle with olive oil dust with paprika, season and bake for 30 min basting once or twice.

In a deep frier or wok fry the sage leaves and drain on paper.

Wipe most of the marinade off season and grill for 5 min either side and leave to rest.

Add juice from chops to stock and reduce to desired consistance.

Chops onto plate, sauce around the chop, with head of garlic off center with sage leaves.
