Grilled lamb with white beans and mint

Ingredients
Feeds 4. Takes 30 mins.


800g canned white beans (ie, 2 cans)
4tbsp olive oil
2 garlic cloves, squashed
20 fresh mint leaves
3 rosemary sprigs
˝tsp sea salt
˝tsp freshly ground black pepper
8 lamb cutlets, well trimmed
1tbsp lemon juice
Extra mint and rosemary to serve
Extra-virgin olive oil to serve

Combine the olive oil, garlic cloves, mint leaves, rosemary, sea salt and pepper, and coat the lamb cutlets in the mixture. Leave to marinate for ten minutes or so.

Heat the grill or a cast-iron griddle until hot. Drain the lamb, reserving the marinade, and grill the lamb on both sides until crusty outside and still pink inside. In the meantime drain the beans, rinse with cold water and shake dry. Combine with the marinade in a frying pan and heat gently.

Add the lemon juice, sea salt and pepper to taste, stirring, and divide between four warmed dinner plates, removing the garlic.

Arrange the lamb cutlets on top, tuck in fresh mint and rosemary, drizzle with olive oil and serve.
