Neck of lamb casserole

1 kg neck of lamb
5 tbsp olive oil
1.25kg potato's
450 gr red onions
55 gr wild rice
large bunch flat leaf parsley
large bunch coriander
2 kaffir lime leaves
1 tsp chilli, chopped
2 carrots
1.1 ltrs chicken stock or lamb


preheat oven 180 c
In casserole dish, place a layer of potato then a layer of thinly sliced onion.
Scatter over some wild rice, 5 tablespoons chopped parsley, 4 tablespoons chopped coriander, 1 lime leaf and chillies.
Add lamb and then potato, sliced carrots and remaining wild rice, last lime leaf and remainedr parsley and coriander.
Season and then last layer of potato.
Cover with stock to the top layer of potato.
Cover and bake for 2 hours.
Remove lid and colour potatoe top for a further 20 min.
