Confit of cherry tomatoes

Serves 4

This will keep in a sealed container in the fridge for one week. Serve at room temperature or slightly warm.

250g vine-ripened cherry tomatoes
Sea salt and freshly ground black pepper
2 sprigs fresh thyme
Olive oil

1 Preheat the oven to 140C/275F/Gas 1. Put the cherry tomatoes in a small ovenproof dish, season with salt and pepper and sprinkle with thyme leaves.
2 Pour over enough oil to cover and cook in the warm oven for 3-4 hours. Remove from the oven and leave to cool in the oil
