The Kitchen Brigade

 
The kitchen staff is a working team of trained cooks and chefs. The size of the brigade is usually determined by the following factors:

Kitchen staff in small, medium and large kitchens

Small Kitchen staff

Head chef ~ Chef de cuisine
Station chef ~ Chef de partie
Assistant chef ~ Commis
Apprentice ~ Apprentis

Medium Kitchen

Executive Chef ~ Chef de cuisine
Station Chef ~ Chef de partie
Assistant chef ~ Commis
Apprentices ~ Apprentis

Large Kitchen

Executive chef ~ Chef de cuisine

Duties of kitchen staff members

Chef ~ Chef de cuisine (with culinary degree) : Responsible for all kitchen operations
Sous chef : Second in command, fills in for chef
Chef de partie : Station chef, supervises at least one additional person
Cuisineur seul : chef working alone
Commis : Inexperienced chef, supervised by chef de partie
Apprentice : Apprentice training to become a chef

Kitchen departments and their functions

Executive chef ~ Chef de cuisine

Manages the whole kitchen and staff
Prepares rotas and assignments
Plans and designs menu
Purchasing and controls
Cost calculations
Trains apprentices
Responsible for sanitary conditions
Responsible for preparation and presentation
Communicates with guests

Sous chef ~ Sous chef


Takes on responsibilities of executive chef when absent
Also responsible for apprentice training
Often also hold a station as chef de partie

Saucier : prepare sauces, meat game, poultry, and fish
Entremetier : Prepares soups, vegetables, pasta cheese and egg dishes
Garde manger : All cold food preparation. Bones and portion meat, game, poultry and fish
Pastry chef ~ Patissier : Prepares all pastries and desserts
Tourant : Chef de partie able to work all sections
