What is it with over 50 yr old chefs

Hi chefs, I am 50yrs and with lots of experience
in classical kitchen specialized in Italian can not get a job in Italy,terrible economy,but what about the rest of the world?

That's really sticky. I'm from LA and here people have a great respect for the experienced chefs. Ideally with increasing experience the opportunities should increase. If you are good at cooking all types of food, like other that Italian foods, then you can change the place itself. Or if you have some good contacts, so that you can borrow some money, start your own restaurant. That may also be difficult for you at this point of time. The best thing would be a food truck. As this business has low investment and gives high returns. After some years you can easily start your own restaurant.

FIFTY YEAR OLD CHEFS?

You know a thing or two.....and the new managers are all PC youngsters...go figure....and they do know, got to pay serious money for the experience, and knowledge. Your guess is as good as mine.......

At least, all I can say, hang on, and as less and less kids are coming into the industry.....you and me mate, and a few others, will be cooking hot as we hobble on turbo-charged zimmer frames!

Or.....look south of the Mediterranean....they always appreciate a maestro with ideas to share.....

Or lose yourself in some obscure country with developing tourism, work with the local authorities and start small with a little shack, getting in the hikers, day trippers....etc......knock them out with your magic......word of mouth in disbelief when they get back home....and build up..... At least you'll be guaranteed a better quality of life, no bullshit 'organic' crap, less stress....sunshine, the fresh earthy smell of pure food without the prerequisite additives and steroids....Don't leave it too long, or else you will get old-er from just the thinking,......and then you and me, as we cook, hearing aids, incontinenece pads, viagra and all, forget what we are about as we reminisce......
