Modernised chicken kiev

I would like to modernise the chicken kiev. I was thinking a chicken mousse n then piping a cafe de paris butter in the center n rolling it like a boudain I would like to poach it in a water bath. what temperature range should i b aiming for and how long? Any other cooking suggestions?
