Canadian French Bistro thinking of selling business and have questions

Hello there I am new to this forum just looking for some advice. I am a French Chef and own and operate a French Bistro in Eastern Ontario Canada. I have been running this business for 8 years now. I am thinking of selling the business and keeping the building. I have been advised by my broker (real estate) to try and find a apprentice that may be interested in coming to work with me and with the hopes of taking over in a few years. The difficult part in that here in Ontario Canada it's difficult to have people come on board with passion/skill . My business is French Pastries/ all homemade breads/sandwiches / gourmet frozen take out all made in house plus catering in the evening and Chef Tables in the evening as well. Each Saturday I make over 700 croissants to sell and people are typically lined up to get in. For some one to want to take over and work this hard is difficult to find. Looking for any suggestions on how to reach the right person. It's a good opportunity for someone wanting to work hard for their passion. We also have a beautiful apartment above our restaurant. Any guidance would be appreciated.
