Sorbet - Ad Lemon juice to pineapple? why?

I can almost understand adding lemon juice to a sorbet recipe if the fruit is not citric as a balance or a stabilizer of flavor, but if the sorbet is pineapple, why add lemon juice?

Hi Chef

Not tooooo sure.

But I do Know that you cant make jelly from pineapple, it will not set because of the acidity. However if you add a chilli to the juice, this creates a neutral ph balance and it will then set.

I think we need to find a better scientific explanation to your original question.
