Hi Billy (Chef , in a few years time)

Well congratulations on the hardest yet most rewarding job in the world, maybe I am biased but good luck.

Advice, well college is a good place to start, just remeber that it is only the basics and the foundations that you will learn. Knoweladge is power !! so in this respect read, find other books, some suggestions :

Classical cooking the modern way, by Pauli
Larousse Gastronomique by Larousse

These are are the classical techniques that you will need to learn.

Secondly when you make it into a kitchen, Learn again, take notes, when you have learnt all you can from that chef, move on and repeat the process, get your head down, make notes, learn and move on.

Good Luck
