Most courses include practical work, but any additional work experience of a couple of hours each week, or on weekends in some hotel / restaurant will give you an edge in the job market, since employers give preference to those with some work experience.

After completion of your training, if you join any hotel or restaurant you will have to pick up experience as you go through a well-defined hierarchy of responsibility and position. All chefs start as a kitchen trainee and work up the ladder from

Hotels inundated with Applicants

As hotels and restaurants continue to bleed jobs, thousands of people are applying for newly opened positions, overwhelming hiring staff and pointing up how hard the recession has hit service-sector workers.

Nearly 11,000 people have applied for 400 jobs at the swanky W Hollywood Hotel & Residences slated to open in Hollywood early next year. About 3,500 have applied for 550 openings at the new Ritz-Carlton Los Angeles near Staples Center.

And it’s not just happening in Southern California: Thousands have sought work at the new CityCenter project in Las Vegas, the Roosevelt Hotel in New Orleans and other properties across the country.

John Husing, an independent economist with Economics & Politics Inc., said the turnout for hotel jobs in Southern California reflects the overabundance of workers with limited education searching for hotel jobs in the service sector. He said 45.5% of Los Angeles County adults older than 25 have no college education and are primarily limited to blue-collar or service-sector work.

Other Southern California industries that have historically supplied jobs for such workers, including the construction, manufacturing and cargo industries, are shedding even more jobs than the hotel industry, Husing said.

“When something opens up in one of the service sectors that doesn’t require a heavy level of education, it’s not surprising that so many people would show up,” he said.

The woes of the hotel industry are documented in occupancy rates that hover close to 50% nationwide, slumping revenue figures and a dramatic jump in foreclosures and bank defaults by struggling hotel owners. The drop in business travel, as corporations tighten their belts, has stung the industry.

To survive the slump, hotels have been trimming staff. The unemployment rate among workers in the leisure and hospitality sector jumped to 12.4% in October from 8.9% in the same month a year earlier. In the 12 months that ended Oct. 31, 478,000 workers in the sector lost their jobs, bringing the total out of work to 1.6 million, according to the Bureau of Labor Statistics.

As a result, job postings at hotels across the country have been met with an outpouring of applicants.

In the Lake Tahoe area, the Ritz-Carlton Highlands has received about 2,500 job applications since October for 300 positions to staff the hotel, which opens next week.

“We’ve had an overwhelming response,” said Steven H. Holt, a spokesman for the hotel.

He attributed the abundance of applicants to a high unemployment rate in the region and the hotel chain’s reputation for stable, quality jobs.

The Hard Rock hotel in Las Vegas received more than 3,800 applications at a two-day job fair in June to fill about 800 jobs created after the hotel undertook a $750-million expansion.

Meanwhile, the developers of CityCenter, an $8.5-billion, mixed-use urban complex of hotels, residences, retail outlets and entertainment venues on the Las Vegas Strip, had to sort through 170,000 applications for the 12,000 jobs that they had open.

The huge response to job openings in the hospitality industry is to be expected, said Bruce Baltin, senior vice president at hospitality consulting firm PFK Consulting, considering the enormous number of people who have been laid off in the sector.

“It’s not a shock,” Baltin said. “It’s just a fact that a lot of people in the industry are looking for work.”

Jim McPartlin, general manager of the W Hollywood Hotel & Residences, said the flood of applications had created a huge workload.

The facility, scheduled to open Jan. 28, launched a “talent center” on Hollywood Boulevard in August to take applications for about 400 positions in the hotel and the adjacent restaurant, spa and nightclub. The center has received 10,825 applications either in person or online and staff members have interviewed 1,000 applicants. So far, about 90 people have been hired.

Applicants have included workers with extensive hotel experience as well as people with no experience in the industry, McPartlin said.

The interview process has been time-consuming, he said, because McPartlin insists on meeting every job finalist, including a real estate agent who didn’t like what she was doing and wanted to try something new.

The “cool” factor may also play a role in the application bonanza at the W Hollywood and Hard Rock hotels, said Carl Winston, director of San Diego State University’s Hospitality and Tourism Management Program.

Job seekers are motivated to land jobs at companies with a popular image, Winston said.

“W is a cool brand,” he said. “People are attracted to it.”

The industry faces a Shortage of Chefs

A shortage of skilled chefs is causing some restaurants to consider shutting up shop, says Anna Lubetzky, executive account manager at hospitality recruiter Hospoworld.

“There are some restaurants that I’ve spoken to who are like, ‘Hey, if we can’t find a head chef, we might have to close our restaurant until we do’,” Lubetzky says.

The chef shortage is across the board with many restaurants having multiple vacancies within their kitchens. But some of the worst shortages are at the chef de partie level. The chef de partie supervises a particular section within the kitchen and is answerable to the sous chef and head chef. A big part of the problem is the low pay for what can be quite hard physical work.

“For a chef de partie, a lot of places will pay $37,000 to $38,000, but overseas they can get a lot more,” Lubetzky says. “They’ll have a formal qualification and they will have worked for a couple of years to get to that level.”

After putting in the work to reach that level there is a strong temptation for good chefs to go overseas.

“The other problem that I suppose we’re facing in New Zealand is the pay rate because elsewhere in the world chefs are being paid a lot more,” Lubetsky says. “There’s a lot of opportunity for them to go on cruise liners where they are paid in American dollars and it’s also tax free.”

Despite the pay and shortage of workers, Lubetzky says local restaurants are becoming more particular when hiring. “They want people with experience. And it’s not just in the pub-style restaurants. They want people who have Mediterranean cuisine and Pacific Rim cuisine in their experience as well.”

Restaurants are advised not to dither when making a decision about hiring someone.

“You have to move quickly,” Lubetsky says. “A lot of my clients have missed out on good chefs because they just can’t see them quickly enough or they have to change an appointment – and, within that 24 hours, they’re gone, they’ve got another job.” With plenty of jobs available, young chefs are looking to advance their careers as quickly as possible. “A chef may take a role and then they might see something better and they’ll go for it. A lot of people want to get up into that head chef level.”

But Lubetzky warns that jumping from a well-respected restaurant as a chef de partie into a smaller restaurant as head chef might gain you a job title but not do much for your career.

“In terms of career for them on an international scale, it’s not actually that beneficial. If you want to develop a really good career you’ve got to choose carefully the employer that you work for,” Lubetsky says. Qualified and experienced chefs have been added to the Department of Immigration’s immediate skill shortage list, which means their visas can be fast-tracked

So the quality and training of staff, particularly at the luxury end, is absolutely critical.

Different hotels have subtly different philosophies in how they recruit. Why should you care about this when you choose a hotel?

Because attentive and friendly staff are more likely to leave a positive imprint on your memory than any other aspect of your hotel stay.

Heres a capsule summary of the findings from speaking to some of Londons leading hoteliers about staff recruitment:

One Aldwych. This iconic 5 star hotel believes that good service comes from the heart. When hiring people, they combine a rigorous assessment system with a significant dose of intuition. People are recruited as much for emotional intelligence as technical ability and, according to founder Gordon Campbell Gray, the ability to be kind. More about One Aldwych here.

Claridges (Maybourne Hotel Group). Service at Claridges is like performance as they need to excel constantly to excite guests. They look for staff with exceptional energy, passion, dedication and professionalism who are trained to over-deliver as consistently as possible. I also met the HR and Marketing Directors at Maybournes HQ, who told me that recruiting and retaining excellent staff was their number one priority.

InterContinental Hotels Group. People are hired according to the profile of each of their various brands. For example, for Holiday Inn they look for staff with a very different personality to those theyd recruit for InterContinental. Theres a lot of emphasis on their employees speaking the specific brands language.

Rocco Forte Collection (Browns in London). Sir Rocco Forte emphasised to me how he feels each individual has an innate sense of hospitality. He and his General Managers try to provide a positive example by coaching and training the right behaviours. Staff are key to the service philosophy, which aims above all to make each customer feel like an individual.

Le Meridien. I met the CEO of this group before the takeover by Starwood, though they still operate as Le Meridien in their Piccadilly hotel. The emphasis is on hiring people with the right attitude: those who enjoy the company of others and who can engage. The ability to anticipate the needs of guests is seen as critical.

Myhotels. The Chairman of this boutique hotel group (with hotels in Bloomsbury and Chelsea) believes you should recruit people who already have a certain warmth, as this is not something which can be instilled. They aim to create a family atmosphere among their staff.

YOTEL. They look for staff with good service skills generally, not necessarily with a hotel background. Indeed, the wording of their job vacancies makes them sound like airline jobs (cabin crew) rather than typical hotel jobs! YOTEL trains its people to serve customers in a friendly manner with the ability to work quickly under pressure, since fast turnaround is vital to their business model.

Hilton. Ive visited the companys corporate headquarters in Watford and have also met GMs at various Hiltons. They all have an enlightened, long-term approach towards training and developing their 100,000 team members. Hilton invest a lot of time and effort both in recruitment and skills development through Hilton University and other initiatives.

The Grove (5 star hotel near Watford). This luxury hotel recruits mainly for attitude, since they believe that everything else can be trained. They also focus a lot on staff retention and provide their people with benefits and facilities that will make them say “wow”.

Malmaison (4 star boutique chain). They aim to recruit people with a sense of fun and with potential for rapid advancement. The CEO believes in fast-tracking stars and in providing the best training in the industry. They invest a lot in their graduate scheme. More on Malmaison here.

The Lanesborough (5 star London hotel near Hyde Park). They recruit butlers whose sole role is to serve customers and to create work for themselves. The hotels Managing Director Mr Gelardi told me that this is an unusual attitude requiring very special qualities. He also believes strongly in highlighting staff behind the scenes, the people who often work hardest at a hotel whom the guest may never see.

You should check out under part time jobs but they don’t list them that often. Check out as many job boards as you can while also getting some help with the recruitment agencies. Don’t be afraid to ask others input if they use a good one as well. The more people tell you the better to determine which ones to use.

Having recently returned from Singapore where I met with recruitment industry colleagues from the US, Australia, Singapore, Malaysia and Hong Kong, it is apparent that the most significant changes to recruitment involve the development of professional employment organisations (P.E.O.s), the use of email and the internet for sourcing jobs and candidates and the continuing trend towards contractors and temporary staff.

The recruitment industry is gearing up for these changes by developing strategic alliances and global partnering to ensure access to the best candidates world wide.

Professionalism, technical competence and the development of world best practice are the hallmarks of successful recruitment consultancies. Organisations hiring staff continue to undergo massive change in striving to be competitive and profitable.

Many organisations have moved to outsourcing all of their non-core activities.

P.E.O.s have emerged to manage multiple employee groups for companies outsourcing the human resource function. All employees from unskilled positions through to the CEO can, and are, outsourced.

This concept is quite different to the typical approach used by most temp agencies. Organisations of any size can benefit from this approach and employees, particularly those working in smaller companies, have much to gain from the combined benefits that a P.E.O. can offer as a large employer.

The Art of Recruiting

Recruiting seems to be one of those things that is poorly understood (sometimes even by those who call themselves Recruiters). I thought it may be a good thing to define their functions here, for anyone who is interested. There are several types of recruiting, but the mechanics and psychology of it are all the same.

First, let me explain, for those who don’t know; there are Corporate Recruiters (those who are employed by a company for the purpose of finding and qualifying new employees for the company). And there are 3rd party Recruiters (those who are subcontracted to by a company for the same purpose).

There are a couple of different types of 3rd party recruiters, but the main difference lies in how they are compensated.

Both are paid by the hiring company, but Retained Recruiters typically have an ‘exclusive’ with the company and are paid a portion of their fee upfront, and the balance paid when the search is over. Retained recruiters are typically used for executive level positions.

Contingency Recruiters don’t typically have an exclusive relationship with the company, and are paid a fee only if the company hires a candidate through their efforts. (Most 3rd party recruiters fall into this category.)

I do some (volunteer) interviewing skills training, among other things, and am often asked about recruiters by job seekers. Among the comments/questions I hear the most are;

1. “Recruiters often call and ask for my resume, but then I never hear from them again.”

2. “A recruiter sent me on an interview, but I can’t seem to get any feedback about how I did. …They say the company is still interviewing, so I can’t assess where I may have gone wrong (so that I may do a better job on my next interview).”

3. “I have sent out dozens of resumes (sometimes 100′s) to recruiters, but I never hear from them, and can’t get them to return my calls.”

There are various reasons for the above situations, but many of them boil down to one thing… money. To successfully work with recruiters, one must first understand that they are not working for you (the job seeker), but the company.

It is the company that pays their fees. It is the company they must ultimately satisfy if they are to get paid for all of their hard work. 3rd party recruiters are typically compensated 20-30%, or more, of a placed candidate’s first year annual salary. (If a job seeker could pay them $10,000-$25,000 to find them a job, the job seeker may find a shift in attention from a recruiter, but that’s not going to happen, so forget about that.)
